配料：

三黄鸡 250克、干香菇 10朵、小葱 1根、八角 2个、香叶少许、鸡精少许、柿子椒 1个、红尖椒 2个、干辣椒 2个、姜片少许、蒜少许、老抽 3毫升、生抽 5毫升、肉桂少许

烹饪步骤：

1.鸡肉剁小块，清水反复洗干净

2.干香菇提前泡发洗净

3.鸡肉入锅焯水十分钟，去除血泡和腥味儿

4.热锅入油，烧开后放入干辣椒、八角、香叶、姜蒜。干辣椒用剪刀剪碎并炒出香味

5.倒入焯水过后的鸡肉，用中火反复翻炒，直到颜色发白

6.加入少许老抽翻炒一会后，加入一杯凉水没过全部鸡肉

7.倒入香菇，再放少许生抽和几片肉桂

8.这是从斯里兰卡带回来的肉桂，烧菜还是煲汤都是一个提味的好助手，没有的话可以用桂皮代替

9.放入青红椒，香葱之后盖上锅盖慢炖40分钟

烹饪小贴士：

1、蘑菇中含有干扰素的诱导剂，它能提高人体内干扰素的水平。而干扰素能干扰病毒的蛋白合成，抑制病毒的生长繁殖。此外，蘑菇还含有提高人体免疫力功效的活性物质多糖。

2、鸡肉、蘑菇、大蒜、葱、生姜、洋葱、白萝卜、香菜等食物能增强人体免疫力，具有抗病毒的作用。尤其是小鸡炖蘑菇这道菜，将蘑菇与鸡肉搭配炖汤，同时重用同样有抑制病毒作用的大葱、生姜与香菜，便会使鸡汤和鸡肉抗病毒及提高免疫力的功效更加显著。

3、肾虚者烹制此菜时，可加点板栗佐菜，不仅味道更好，还有治病之功效。但小鸡炖蘑菇吃多了易上火，所以痛风病人以及阳虚体质，常有畏寒怕冷、四肢不温的人要适量少吃。
