水鸡是中国四川传统特色菜肴，属于川菜系中的凉菜，佐料丰富，集麻辣鲜香嫩爽于一身。在烹制时，煮鸡用的汤料很有讲究，需要恰到好处，这样可以最大限度地保存鸡的可溶性蛋白，增加鸡肉的鲜美程度，又能具备其特有的香型和滋味。

口水鸡是一道凉菜，佐料丰富，集麻辣鲜香嫩爽于一身。有"名驰巴蜀三千里，味压江南十二州"的美称。"口水鸡"这名字初听感觉有点不雅，脑子里可能会出现一副口水滴哒的样子，之所以叫口水鸡还因为有很多花椒，吃了会麻到嘴巴瘫痪不由自主流口水。

下面教大家，家常版口水鸡，用料简单

准备的食材：

鸡腿3~4个，

姜、葱、蒜、小米辣、花椒适量

调味：盐、酱油、醋、白糖、辣椒油、花椒油、芝麻油

首先将冷冻的鸡腿常温下解冻，推荐新鲜的鸡腿，味道鲜嫩。

将姜，葱切段，小米辣切成小段，蒜切末，放在盘中，待会用的上。

处理鸡腿，冷水下锅，将鸡腿、葱段和花椒都放到锅里，大火沸腾煮开，转中火再煮十分钟左右。

关火焖一会，捞出来过凉水，控干水份备用。

温度不烫手开始撕条，你爱吃多大的就撕成多大就可以了，三只鸡腿撕了这么一盘，放在一旁备用。

调汁：蒜末、小米辣、葱末，再加酱油、醋、适量白糖、盐、辣椒油、花椒油和芝麻油。

热锅热油，小心烫到，淋到蒜末小米辣上面，激发出小米辣、葱和蒜的香味，拌匀即可。

倒入鸡腿肉，将鸡肉和调料拌匀就可以了，可以撒点葱花装饰，好吃又好看，去掉一天的油腻，开胃又下饭。
