素干锅的做法

干锅土豆片

原料：土豆，尖椒，鲜朝天椒，葱姜蒜，老抽，白糖，青蒜，香辣酱

做法：

1.土豆切厚片过两遍清水,用中火炸至表皮略干，捞出备用。

2.尖椒切小片，鲜朝天椒切小段备用。

4.加适量底油，放姜片将豆豉炒香，加葱花蒜片、香辣酱炒出香味，加老抽酱油加少许水。

5.水开后加土豆、白糖两小勺、1/4.高汤块，烧至汁液即将收干加尖椒片、鲜朝天椒段略炒、最后加青蒜节，关火炒匀出锅。

干锅茶树菇

原料：茶树菇（鲜） 200 克、姜丝和蒜末各4 克、酱油2 茶匙、彩椒 1 个、盐 7 克、油 1 汤匙、料酒、生粉各适量

做法：

1• 彩椒洗净切块。新鲜茶树菇洗净切段。

2• 锅烧热后放油，加入蒜末、姜丝爆香

3• 加入茶树菇和彩椒块，大火翻炒至茶树菇变软后，调入剩余的盐、酱油炒匀起锅即可。

干锅包菜

原料：牛心菜 250 克、干辣椒 4 个、蒜片 3 克、海天香醋 1 茶匙、海天味极鲜酱油 2 茶匙、盐、生粉各1 茶匙、油 2 茶匙、料酒 1 茶匙

做法：

1.牛心菜洗净后用手撕成小片，干辣椒洗净切段。

2.锅中留油，烧六至成热将辣椒段和大蒜片炸出香味，调至大火，放入牛心菜爆炒至半熟，放入五花肉片、海天香醋翻炒均匀即可出锅。

干锅千页豆腐

原料：干锅、豆腐、洋葱、酱油、料酒

做法：

1.木耳豆腐切片青红椒切斜丝肉片切片，洋葱切丝放在锅底

2.锅中润油，先煸炒肉片，微卷焦黄时捞出备用

3.锅中留底油，放姜丝和蒜瓣爆香，放一勺豆瓣酱，小火炒出红油，然后放入豆腐翻炒均匀

4.淋入酱油，料酒，加白糖，然后依次放入青红椒，木耳等配菜，继续炒到青椒断生

5.加少许味精，盛到干锅上，接下来点火就可以吃啦

虾仁干锅粉丝

原料：龙口粉丝一个、葱姜、六月鲜、红辣椒

做法：

1.木耳豆腐切片青红椒切斜丝肉片切片，洋葱切丝放在锅底

2.锅中留底油，放姜丝和蒜瓣爆香，放一勺豆瓣酱，小火炒出红油，然后放入豆腐翻炒均匀

干锅焖仔茄

原料：白茄（可用其他茄子代替）500克，青红杭椒各15克，鲜五花肉50克，洋葱丝50克。调料蚝油25克，辣妹子酱10克，荆沙西辣酱10克，味精5克，胡椒粉3克，生粉20克，姜丝、蒜片各2克，美极鲜酱油5克，鲜鱼汤150克，鸡蛋糊200克，色拉油1000克，

做法：

1。、锅内下油，将白茄块中火炸成外酥里嫩成金黄色捞出备用。

3、锅中放10克色拉油烧热后，下入洋葱丝，炸出香味后盛入干锅中垫底。

4、将鲜五花肉切成0.2厘米宽、6厘米长的片，入锅中煸香，放辣妹子酱、西辣酱、酱油、蒜片、姜丝提味，放入鲜鱼汤大火煮开后，将炸好的茄子放入汤中大火烧2分钟，鲜鱼汤调和作料后，放入蚝油、味精、胡椒粉调味同茄子翻炒均匀，最后点缀青红椒上桌即可。
