灰条菜, 最不缺的时鲜野菜

(观复先生）太原连下几天雨，楼下空地长出许多灰灰菜，有小孩个头那么高。远望蔚然，像一丛丛灌木。

“灰灰菜”是学名，家乡叫“灰条”。是一种野草，生命力强。田间地头，房前屋后，都会生长。特别是建筑垃圾堆上，土松，长得最旺。

灰条刚出来的嫩苗可以入菜，老的也可掐尖食用。

家来熟客，我到楼下掐了一把灰条，焯水，捏团，切碎，放入蒜泥，椒盐油泼，淋几滴生抽和陈醋。等到扣盘上桌，几位都猜不出来是何物种。一动筷子，却赞其味有几分野趣。

灰条这种野簌，区别于正规的菜。它的可贵地方在于野生，没有人为参与，绝对绿色食品。对于有野蔬之癖的人来说，自然“格”要高些。听说有的地方开始人工种植灰条，这就意思不大了。

灰条还能包饺子和包子。能做汤，几有“泉水野簌”之美。据说吃灰条能降压，能补钙，还能预防贫血。这些我们姑且信之食之。不过此物气味清素偏寡，烹调时候不妨作料重一些。

记得幼年上学，小学校里号召暑假割草，摊在操场上晒干，粉碎后喂猪。那时候学校有个小农场，不但喂猪，还种棉花和小麦。有一年清明节，老师带我们小学生一起去小农场种棉花，刚刚把伴有农药的棉花籽放进垄沟，忽然天色大变，下起冰雹，一众嘻嘻哈哈落荒而归。

那时割草，老师专门强调不要割灰条，一来晒干了没斤两，二来猪要现吃的话，容易拉肚子。特别是带有露水的草，猪呀兔子呀不可以随便吃，吃了坏肚子。

运城城南有个中条山，山下有个凤凰谷，是夏日纳凉的好去处。我有时回乡，会被朋友整到这里喝酒。

凤凰谷口有一片农家乐，错落掩映在山水当中。盛夏时候高树蔽日，凉风生起，温度要比市里低三五度。山上有野鸡野兔，有土鸡蛋。最不缺的是时鲜野菜，像马齿苋、人汉苗、蒲公英、扫帚苗、灰条等等，都有。

有时候面对满桌菜品，突然会有恍惚之感，惊叹味蕾之变——小时候我们在地里割过的许多喂猪草，现在都摇身一变，成为盘中稀罕，简直是“沐猴而冠”。

“呦呦鹿鸣，食野之苹。”这是《诗经》里的名句。这个“苹”解释是苹草，大概就是白蒿。《诗经》里描写的有些地方，就是我的家乡。里面的一些植物，是我们小时候见过和吃过的。

区别在于，我们小时候吃野菜，是聊以下饭，是弥补蔬菜的不足。现在呢，是主动找野菜来吃，是寻找野趣，而不是简单的满足口腹之欲。一个主动，一个被动，这算是变化了。

这几天大暑节气，天地别样，草木最旺，蝉开始大声鸣叫。一声长长的蝉鸣，是很过瘾的旺夏的感觉。这是一年中阳气最盛的时节，达到极点。人体出汗多，毛孔张开。大暑养生，我的体会就是问计自然，中年不当油腻男，什么茵陈呀，蒲公英呀，菊花呀，绿茶呀，拿过来泡着喝，包括吃一些怪怪的野菜和苦瓜。

一把钥匙开一把锁。其实人生天地间，大自然妥妥地给你准备着一些保健防疫的东西呢。
